Below is a delicious dinner recipe that is quick to make and nourishing.
Red Curry Chicken and Red Quinoa
1-pound Chicken, cut into small chunks
1 Red Onion, chopped
3 cloves Garlic, chopped
2 Carrots, sliced
1 tablespoon Coconut Oil
1 stalk Broccoli, chopped
2 tablespoons Red Curry Paste
1 box/can Coconut Milk
1 cup Red Quinoa, dried
In large skillet (I like the cast iron type), sauté onions, carrots, garlic, and chicken in coconut oil until cooked. Add red curry paste and coconut milk, stir. Add broccoli, stir. Cover. Meanwhile, add red quinoa and water in a covered pot. Bring to a boil, reduce to simmer, covered for 10-20 minutes (water will be absorbed). Scoop quinoa on a plate and top with chicken red curry. Enjoy!
